Sip and Guzzle is on Cornelia Street in Greenwich Village and operates as two bars stacked on top of each other with deliberately different personalities. Guzzle is upstairs: an 1860s-inspired saloon with timeless cocktails done well. Sip is downstairs: a subterranean Japanese-style bar with bespoke hand-crafted drinks, minimalist aesthetics, and a more focused experience.

The project is a collaboration between Steve Schneider of Employees Only and Tokyo bar legend Shingo Gokan, and the food program was built by Mike Bagale, formerly of three-Michelin-starred Alinea in Chicago. The combination of those three backgrounds produces something that is hard to categorize and very good at most of what it attempts.

In 2025 it ranked fifth on the North America's 50 Best Bars list. For a new bar on a block that has hosted some of the city's most enduring restaurants, that kind of recognition arrived quickly and was not unearned.
