Phocific Standard Time is a Vietnamese cocktail bar in downtown Seattle run by sisters Quynh and Yenvy Pham, tucked above Phở Bắc Downtown. This intimate, cozy space features cocktails infused with Vietnamese ingredients like pandan leaf, Chartreuse egg yolk custard, and pho broth. Signature cocktails include the Nuoc Mat with jasmine and longan, the Dua Dua with coconut milk and basil seeds, and the Trung Muoi made with pho fat-washed Japanese whisky and salted egg yolk. The food menu offers pastries with pate, potato, and mushroom, plus a pate trio with pho fat, mushroom tofu, and canned fish tomato pates served with sesame crackers and picklings. Cocktails run $15 to $20. Bon Appetit recognized it as one of the best new restaurants of 2022.
