The Ivory Peacock is at 38 West 26th Street in NoMad, and the front of house is built around an Emerald Bar with over a thousand gin labels from around the world, the largest collection in the United States. The discovery of an illustration of an ivory peacock beneath the drywall during renovation gave the place its name. Downstairs is Ploume, the speakeasy lounge.

Ploume operates Wednesday through Saturday from five in the evening and functions as a genuinely separate experience from the restaurant and bar above it. The design references the Prohibition era without reproducing it literally, and the cocktail program in the downstairs room is built around the gin collection as its organizing principle while also running a full cocktail menu. Head bartenders Carlos Soto and Daniel Benitez run seasonal spins on classics using French kitchen techniques from the restaurant side.

The French-Japanese dining menu upstairs is Michelin-adjacent in its seriousness. Ploume offers access to that same quality of attention in a more intimate and deliberately hidden setting.
