Ploume is below The Ivory Peacock on West 26th Street in NoMad, accessible Wednesday through Saturday starting at five. The room is 3,000 square feet of subterranean bar with custom furniture by Timothy Oulton and bar installations designed by Tobin Ellis, who builds bars for people who are serious about how a workspace functions.

The cocktail program pairs with French and Japanese-forward food from chef Grayson Altenberg, who came up through Babbo and The French Laundry. Friday and Saturday nights the DJs arrive after eleven.

The space also takes private events for up to 150 guests, and the combination of a serious kitchen, a well-designed bar, and Prohibition-era basement aesthetics makes it competitive with anything in that category in the neighborhood.
