The Gibson Room is at 2224 SW 22nd Street in the Shenandoah neighborhood along Coral Way. It was opened in 2022 by chef Michael Beltran, who holds a Michelin star for his restaurant Ariete, and this is his more casual, late-night project.

The room is painted slate grey, lit mostly by votives on the tables, and anchored by live music that runs almost every night. The weekly lineup includes flamenco guitar on Tuesdays, a jazz jam on Wednesdays, a pianist on Thursdays, R&B on Fridays, jazz fusion on Saturdays, and vinyl records on Sundays.

Food runs to elevated bar snacks: maduros fondue, baked oysters, fish and chips, a half-pound burger. The kitchen also runs a late-night menu. The bar's namesake cocktail is a Gibson, the martini variant garnished with a pickled onion instead of an olive. Closed Mondays.
