The Office
The Office has 14 seats and no menu. It sits behind The Aviary, Grant Achatz's molecular cocktail bar in Fulton Market, accessible through a locked door that requires asking your Aviary server specifically to get you in. The door shows up on the original building blueprints simply labeled "office," which is where the name came from.
Once inside, you pick a spirit, describe what you're after, and the bartender builds something using a library of rare and vintage bottles, some of which run $375 per ounce. The cocktails are $20 each. The experience is one of the most genuinely exclusive things you can do in Chicago's bar scene, not because of a velvet rope, but because most people don't know to ask.
