Potter’s Bar
Potter's Bar is inside the Palmer House Hilton, one of the oldest and most storied hotels in Chicago, and it leans into that history hard. The bar runs on a secret menu accessible through a password obtained via the hotel concierge. Prohibition-era cocktails: the Aviation, the Chicago Fizz, the Whiskey Smash, all made with bathtub-style gin and rum as a nod to how drinks were actually made in the 1920s.
The hotel's underground tunnels, which date to the Prohibition era, inspired the concept. It's open Tuesday through Saturday from 4pm and the tasting experience runs $30 to $50 per person. Worth doing once, especially if you're already in the building.
